To explain steps and functions, we are using the Instant Pot Duo Nova 6-quart model, which is recommended for beginners. We will have a more detailed post on how to use the Instant Pot as a slow cooker soon. The food cooks on a lower heat for a longer period of time but it’s hand-off and suits certain types of dishes. The pot uses controlled gradual heat provided by the heating element in the cooker base. Slow Cook works in the same way as a regular crockpot. You can use it alone or in combination with pressure cooking, such as when you need to brown the meat or onions first. Sauté is simply cooking in the pot using the heating that comes from the element in the bottom of the cooker base. There are other cooking functions that don’t use pressure. If you want to stop the food from cooking right away or you want to eat asap, you can release the pressure manually, which is known as the quick release (QR). During this time, the food continues to cook at a slower rate. If you leave the pot alone, the pressure will release naturally (NPR) but this can take 10-20 minutes depending on the volume of food inside. Depressurizing stage – once cooking under pressure is done (when your timer runs out), the pot stops heating allowing the steam and pressure inside to escape through the release pipe.This is when the time you’ve selected for cooking under pressure starts counting down. Cooking stage – the built-up pressure pushes all the heat and steam inside the pot into the food, cooking it rather quickly.Note: food starts to cook during this stage, kind of like when you boil potatoes on the stove – they start to cook even before the pot comes to a boil, although most of the cooking happens once the water is super hot. This takes 5-20 minutes depending on how much food and liquid you add.
